Sometimes I'm in a hurry and in need of a quick, healthy but satisfying meal. I had organic garlic brown fried rice today for dinner.
Brown rice always fills me up especially after a work out. My recipe only takes about 20 minutes to prepare. Let's face it, we're all busy but it's no excuse for not being able to eat well! Green Recipes - Why is brown rice better than white? Brown rice is low in glycemic index, meaning it's slow burning. Therefore glucose and insulin doesn't rise so fast. That's why when it comes to weight loss, foods which are low in g.i. are better.
Brown rice also helps with the production of serotonin which alleviates depression, it contains calcium, iron, potassium, manganese, zinc, folic acid, and B vitamins. B vitamins are important for the immune and nervous system, promotes metabolism, stimulation of cell production and growth, maintains healthy muscles and skin. B6 maintains brain function. Large concentrations of b6 are found in the brain. It's amazing the benefits of food to the brain and body!
Garlic is one of my favorite ingredients. Research say garlic is natural antibiotic, antibacterial, lowers cholesterol and mild high blood pressure. Brown rice takes a long time to cook so I buy fully cooked organic brown rice at Trader Joe's, it comes in a packaged bowl that cost about $2 each and it's USDA certified organic by QAI. www.traderjoes.com
Here's my recipe:
- Saute 1 or 2 cloves crushed garlic in 1 tsp of sesame oil or olive oil over medium heat until light brown.
- Add 1 large scrambled organic egg and break apart in the pan or 1/4 cup of egg substitute if you're watching cholesterol. Toss and mix Trader Joe's fully cooked brown rice in the pan. Add less sodium soy sauce of about 1 tbsp or to taste, and 1 tsp of Kikkoman Aji-Mirin rice seasoning.
- Slice about 1-2 tbsp green onions and mix in with the fried rice.
It's easy and healthy! You can add your favorite veggies or grilled organic chicken if you prefer but I like it plain.
Boy that sounds good. I am used to eating a lot of rice. I lived in the south for years and red beans and rice was one of my favorite dishes. I don't think the pork sausage was too healthy but it dang sure tasted good.
